🍲 Maple-Sage Butternut Squash & Brown Rice Skillet
Warms the soul. Simple to prepare. Full of seasonal Colorado-flavor.
Ingredients:
1 medium butternut squash, peeled & cubed
2 tbsp olive oil (try a local artisan oil)
2 cloves garlic, minced
1 tsp fresh sage, chopped
1 cup brown rice (cooked)
1 cup vegetable broth
¼ cup heavy cream
Salt & pepper to taste
Directions:
Preheat oven to 400°F. Toss squash with olive oil, garlic, sage, salt & pepper. Roast about 20 – 25 minutes until tender.
In a skillet over medium heat, combine roasted squash, cooked brown rice, vegetable broth and cream. Simmer for 5 minutes until creamy and combined.
Serve topped with a handful of toasted pepitas and a drizzle of local honey or maple syrup.
