The Cozy Fall Comfort Food That's Actually Good for You

Mac and cheese gets a fall upgrade with this recipe that sneaks in nutrition without sacrificing the creamy, cheesy goodness we all crave.

Ingredients:

  • 1 lb whole wheat pasta (elbow macaroni or shells)

  • 2 cups butternut squash, cubed and roasted

  • 2 cups sharp cheddar cheese, shredded

  • 1 cup whole milk

  • 2 tbsp butter

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme (or Β½ tsp dried)

  • Salt and pepper to taste

  • Optional: breadcrumb topping with parmesan

Instructions:

  1. Roast the squash: Preheat oven to 400Β°F. Toss cubed butternut squash with olive oil, salt, and pepper. Roast for 25-30 minutes until tender and slightly caramelized.

  2. Cook the pasta: Prepare pasta according to package directions. Reserve 1 cup pasta water before draining.

  3. Make the sauce: In a blender, combine roasted squash, milk, and half the cheese. Blend until completely smooth.

  4. Combine: In a large pot, melt butter and sautΓ© garlic for 1 minute. Add the squash sauce and remaining cheese. Stir until melted and creamy. Add thyme.

  5. Finish: Toss pasta with sauce. Add reserved pasta water if needed to reach desired consistency.

  6. Optional: Transfer to baking dish, top with breadcrumbs and parmesan, and broil for 3-4 minutes until golden.
